Maxing out bond with your horse is crucial, but taming one in some dangerous areas can be a pain. You can even find other types of bridles and saddles by undertaking Side Quests and other minigames. Once registered - wild horses can also have their manes, bridles, and saddles customized by speaking on horseback to the stable attendant looking over the other horses - but only horses you have maxed affection with. Their stats can be as low as one star or as high as four in any category. The stats of the horse may improve if you venture into dangerous areas - but you'll never know how good your horse is until you register them.
Wild Horses are found in many places - from the fields of Central Hyrule, to the grasslands of the Dueling Peak and around Lake Hylia, all the way to the plains in Akkala or the snowy tundras of the Hebra Mountains and beyond.
